Mexican Pasta Salad

When you hear the word "Pasta", you most likely think of Italian dishes. Not me, when I hear the word "Pasta", I think Yum! Can I have some more? In my opinion, pasta should be it's very own food group. Pasta is a great way to change up a recipe by switching out a few ingredients or by just adding pasta to your favorite dish or soup. In a household of both Italian and Hispanic culinary influences, getting creative with different dishes has produced a lot of simple and delicious meals. With a very busy schedule I don't always have time or energy to cook a big dinner for the family but thanks to Barilla pasta I can still provide delicious Hispanic meals in under 30 minutes.


In my recent years of learning to cook I've learned to combine some of my favorite ingredients with a few traditional dishes. I always look for simple and quick dishes to make. Dishes that are both great for dinner and lunch. If it's something I can make a large batch up so that I can easily grab and eat on a hectic day, even better! I think that's one of the reasons why I love pasta dishes, they are so versatile.

I recently stopped by my local Walmart and picked up a few boxes of Barilla pasta to make a few pasta dishes for the coming busy week. I wanted to try something new and created this "Mexican Pasta Salad", a creative mix of a traditional pasta salad and a few of my favorite Hispanic dishes. 


Mexican Pasta Salad Recipe

Ingredients:
  • 12 oz - Barilla Tri-Color Rotini
  • 1 cup - Salsa
  • 3 Tablespoons - Sour Cream
  • 1 Tablespoon - Mayonnaise
  • 1 - Large Roma Tomato, diced
  • 1 - Avocado, diced
  • 1 can - Black beans, cooked
  • 1/2 can - Corn, cooked
  • Bacon Bits 


Instructions:
  • Cook pasta as directed on the box
  • In a bowl mix together Salsa, mayonnaise and sour cream to make the dressing
  • Once Pasta is cooked and drained, mix all the ingredients together including the dressing.
  • Serve warm or cold.
