Ingredients:

• 1 pound of boneless skinless chopped chicken
• 7 cups of water
• 1 Tbs of Chicken Bouillon
• 1 can of diced tomatoes
• 1 can of corn
• 1 can of black beans (low sodium)
• 1/4 or 1/2 an onion (chopped)
• 1 Tsp of Pepper
• 1/2 Tbs of chopped garlic of garlic powder
• 4 teaspoons of Chili Powder
• 1/2 Tbs of Paprika
• 1/2 Tbs of Celery Salt
• Tortilla chips or strips of tortillas
• Shredded Mozzarella Cheese (optional)
• Cilantro (optional)
• Sliced Avocado (optional)

Instructions:

Add all ingredients except tortilla chips, Cilantro, Cheese and Avocado into a pot and bring to a boil. Continue cooking over a low-medium heat for an hour.

Top with cheese, cilantro, avocado and tortilla chips.

This is one of my favorite breakfast meals to make. It has everything I love about breakfast; Potatoes, Bacon, Egg and Cheese! This meal is easy to make and filling.

Last week I had announced that I was a Nutrisystem blogger and that I had lost 3 pounds the first week. I'll admit... my first week was difficult. It's not easy switching to a completely new and different way of eating. It was a little hard for me to adjust. This past week has been so much easier. The food taste great but it was eating smaller meals that was the hard part for me. Protein shakes and lots of water is what helped get me through the difficult part.

I lost 1 pound in my 2nd week so that makes a total of 4 pounds so far!

I designed this necklace for my mother from Origami Owl. It's a Mother/Grandmother necklace. It has our birthstones and the grandkids birthstones inside the locket. The necklace in person is beautiful and she loved it.

I have never heard of Origami Owl until recently and I think they make the perfect girl for that special lady in your life. They can be personalized to your liking. I'm so excited to be a Nutrisystem Blogger! I am now part of the Nutrisystem Nation.My most important goal this year is to get healthy. I'm very confident that Nurtisytem will help me achieve that goal. I plan on losing 30 pounds, 10 pounds of that is left over from both my pregnancies. I'm not one to do "diets" because I know those don't work. I think it's important to eat healthy and stay active and for many that requires a lifestyle change. The weight you lose on a diet will come and go but if you learn to eat healthy and excise often you'll keep the weight off and be healthier. For me that lifestyle change is a slow process for me.
