Albondigas - Mexican Soup

Making soup on chilly fall and winter days is a family tradition of ours and with the holiday's this season, a traditional family soup recipe can easily come to be a family holiday recipe. Albondigas is a Mexican soup that has been a traditional family recipe for many decades. Now is the time to celebrate the holiday season with family and friends, make it memorable with a delicious family recipe.

Albondigas Recipe

Ingredients:
  • 1 lb. - Ground beef
  • 1/2 cup - Rice
  • 1 - Eggs
  • 2 - Garlic cloves, minced 
  • 1 tablespoon - Soybean oil
  • 2 teaspoons - Oregano
  • 1/2 - Onion, diced
  • 1 - Green Pepper, diced
  • 2 - Potatoes, peeled and chopped
  • 2 - Carrots, chopped
  • 8 oz. - Tomato sauce 
  • 8 cups - Water
  • 2 tablespoons -  beef bouillon 
  • Pepper, for flavor

Directions:
  1. Prepare the meatballs first. In a bowl, mix together - Ground beef, rice, eggs, and 1 teaspoon of Oregano. Form meatballs into small balls using your palms.
  2. In a large pot - add Soybean Oil and garlic, simmer for about 3 minutes over high heat.
  3. Add remaining ingredients and meatballs to the pot. Bring ingredients to a boil then reduce heat to a simmer for 35 minutes.
  4.  Add pepper and salt for taste
